The Chirripo region is a small area high in the Talamance mountain range, home to Costa Ricas largest mountain. This Catuai produced by the Fabiana Family is processed naturally drying the cherries on African raised beds. For the first 3 days the cherries are dried in the shade to legthen the drying process and generate a little fermentation. This fermentation gives the coffee its intense natural flavour, rich sweetness and syrupy body.
